How to Make Pizza Dip with Garlic Knots

  • Preheat your oven to 400 degrees. Lightly oil a 10″ cast iron skillet or baking dish.
  • Add the olive oil, Italian seasoning, garlic, and optional crushed red pepper flakes to a small bowl and stir to combine.
  • Use a rolling pin to gently roll out the pizza dough into an even thickness. Cut 1/4″-1/2″ wide strips, you will have between 16-18 total.
  • Gently tie each strip into a knot, tucking the ends under. Don’t worry if they’re not perfect because they’ll all bake up pretty!
  • Brush the garlic oil mixture onto each knot and place the knots around the outer edge of the skillet. If they don’t all fit place the remaining knots on a parchment paper lined baking sheet.
  • In a separate large mixing bowl add the softened cream cheese, ricotta, garlic powder, remaining Italian seasoning, and crushed red pepper flakes. Stir until smooth and creamy. Fold in half of the shredded mozzarella.

  • Prepare your grill for indirect grilling. For a charcoal grill, bank your charcoal to either side of the grill leaving the middle cooler. For a gas grill heat the outside burners and don’t ignite the middle burner. Allow the grill to heat to around 400 degrees.

Instructions

  9. Spread the cheese mixture into the center of the pan. Spread the pizza sauce over the top of the cheese mixture.
  10. Add the remaining half of the mozzarella over the pizza. Top with pepperoni.
  11. Starting with the garlic knots sprinkle the parmesan over the entire top of the skillet.
  12. Allow the dip to bake for 20 minutes, or until the garlic knots are golden brown and the dip is bubbly.
  13. Let cool slightly before serving. Garnish with additional parmesan, fresh basil, and crushed red pepper flakes if desired.

Notes

  1. You can make this in a smaller skillet or baking dish. If you do place the remaining garlic knots on a parchment paper lined baking sheet. They will only take 8-10 minutes to bake so add them halfway through.
  2. You can add different toppings to this dip. However if you are adding fresh veggies like mushrooms or onions, sauté them first so they release their liquid and don’t make the dip watery. 
  3. This can also be baked on the grill. To bake this on the grill prepare your grill for indirect grilling, banking your charcoal to either side and leaving the middle as a cooler zone. Allow the grill to heat to around 400 degrees. You will need to rotate your skillet occasionally so the garlic knots evenly cook.
