Ingredients

  • 1 cup mayonnaise
  • 1/4 cup pickled jalapenos, finely diced
  • 2 teaspoons pickled jalapeno brine
  • 1 tablespoon shallot, minced
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1/8 cup cilantro, finely chopped
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper

Instructions

  1. Finely chop your jalapenos, shallot, and cilantro.
  2. Add all of the ingredients to a bowl and stir to combine.
  3. Let refrigerate for at least an hour.
  4. Taste and adjust salt if needed.

Notes

  1. Taste your jalapenos first before adding. You can always add a little more or cut back to control the heat.
  2. Fresh jalapenos can be used. Start with 1/8 cup. Remove seeds for less heat if desired.
