Chipotle Turkey Meatloaf

  • 2 pounds ground turkey
  • 1 sweet onion, diced
  • 1 red bell pepper, diced
  • 1 cup shredded carrots (about 2 small carrots)
  • 2 garlic cloves, minced
  • 1 serrano or jalapeno peppers, optional, remove seeds for less heat if desired
  • 2 chipotles, finely diced
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 1 teaspoon kosher salt
  • 1/3 cup cilantro, chopped
  • 1 1/4 cup panko breadcrumbs
  • 1 egg
  • 1/2 cup cottage cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard

Honey Chipotle Glaze

  • 1 tablespoon unsalted butter or olive oil
  • 1/2 sweet onion finely diced
  • 1 cup ketchup, high fructose corn syrup free recommended
  • 24 chipotle peppers, finely chopped, start with two and increase depending on level of heat
  • 3 tablespoons honey, add a little more if you like it sweeter
  • 1 tablespoon adobo sauce
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Dijon mustard

Instructions

  1. Heat a large skillet over medium heat and add olive oil. Add the onion, bell pepper, grated carrots, and serrano/jalapeno if using. Sauté until the onions are translucent and all of the vegetables are soft. 
  2. Add the garlic, cumin, and chili powder and cook for 60 seconds. Turn off the heat and stir in the cilantro.
  3. Add the panko to the vegetable mixture and stir to combine. Let the vegetables cool completely. 
  4. Add the egg, cottage cheese, Worcestershire sauce, Dijon, and salt to a small bowl and whisk to combine.
  5. In a large bowl add the cooled vegetable mixture, ground turkey, and egg mixture. Gently mix to combine.
  6. Heat a skillet over medium high heat and add a splash of olive oil. Break off a piece of the meatloaf mixture and form a patty. Brown both sides of the patty and allow it to cook through. Taste it, and add any additional seasoning to your meat mixture if needed.
  7. Line a baking sheet with parchment paper. Form a loaf on the pan out of the meat.
  8. Let the meatloaf refrigerate for at least 30 minutes while you make your glaze.
  9. To make the honey chipotle glaze heat a small saucepan over medium heat and add the butter or oil. Add the onions and allow them to cook until lightly golden. Add the remaining glaze ingredients and stir to combine. Let cook until just simmering, about 5 minutes. Remove from the heat and let cool completely. 
  10. Preheat your oven to 350 degrees. Brush a thin layer of the glaze on the meatloaf.
  11. Place the baking sheet in the middle rack of the oven and allow it to cook for 30 minutes.
  12. Brush another layer of glaze onto the meatloaf and let it cook another 20-30 minutes or until the internal temperature of the center registers 160 degrees.
  13. Let cool for 10 minutes before slicing.

Notes

  1. To make this on your grill follow all of the directions up to preheating your grill. Instead prepare your grill for indirect grilling. For a charcoal grill bank the charcoal to either side leaving the center as a cooler zone. You can add wood chips for additional flavor. For a gas grill don’t ignite the middle burners. Preheat your grill to between 350-400 degrees. Place the sheet pan in the center, cooler area of the grill. Close the lid and allow it to cook for 30 minutes before brushing with another layer of glaze. Let cook another 20-30 minutes until its internal temperature is 160 degrees.
  2. You can prepare your meatloaf up to the point of cooking a day or two in advance. Cover the baking sheet with plastic wrap and keep it refrigerated until ready to cook.
  3. Reserve 1/4-1/3 cup of the glaze prior to brushing on the meatloaf. You can use this when reheating your meatloaf.
