Rosemary Potato Chips

Crispy, crunchy, and herbaceous, these potato chips are easy to make and won’t last long.

Ingredients

Scale
  • 34 Idaho potatoes washed, small to medium sized
  • 46 rosemary sprigs
  • Flaky sea salt
  • Freshly cracked pepper, black pepper or mixed peppercorns
  • Oil for frying such as canola, grapeseed, vegetable, or peanut oil

 

Instructions

  1. Use a mandoline or knife to slice thin slices of potatoes, about 1/8″ or the thickness of a dime.
  2. Immediatly place slices of potatoes into a bowl of cold water.
  3. Let the potatoes soak for 15 minutes. Drain them and replace the water and allow them to soak another 15 minutes. Repeat this process until the water is clean.
  4. Rinse the potato slices in a colander and let them drain.
  5. Line 1-2 baking sheets with either paper towels or kitchen towels. Spread the drained potatoes onto the baking sheets in a single layer and cover them with either paper or kitchen towels. Thoroughly dry them off.
  6. Heat your grill or stove with a frying pan or cast iron skillet on medium.
  7. Add 1″-1 1/2″ of oil to your frying pan and heat it to 325 degrees.
  8. Carefully add 2 sprigs of rosemary and allow it to fry for 1 minute. Remove it to a paper towel lined baking rack.
  9. Working in batches, carefully add a single layer of potato slices, careful not to crowd them. Keep them gently moving with either a spider or rubber tipped tongs until they are golden brown, 3-4 minutes.
  10. Remove from the skillet and allow them to drain on the paper towel lined rack.
  11. Season with salt, pepper, and crumble the rosemary over the top. 
  12. Add another batch of potatoes and continue the process. Every batch or two add another sprig or two of rosemary.
  13. Allow to drain and cool completely. Transfer to airtight containers if serving later. 

Notes

For more delicate, less rustic potato chips, peel your potatoes. You can also use other hardy herbs such as thyme or sage.
