Ingredients

  • 8 ounces cream cheese, room temperature
  • 1/3 cup mayonnaise such as Duke’s
  • 1/8 cup Frank’s hot sauce
  • 1/4 cup blue cheese, crumbled, plus extra for serving
  • 4 ounces diced pimentos, drained
  • 2 tablespoons celery, finely diced
  • 2 green onions, finely chopped
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 8 ounces medium cheddar, grated
  • 4 ounces extra sharp cheddar, grated

Instructions

  1. Allow your cream cheese to fully come to room temperature and soften. Add it to a bowl and use a spoon to stir it and break it up.
  2. Add the mayo and stir to fully combine, making sure it is smooth and creamy.
  3. Stir in the hot sauce, Worcestershire sauce, and garlic powder.
  4. Add the pimentos, celery, and green onions to the bowl along with the blue cheese and stir to combine.
  5. Add both cheddar cheeses to the bowl and use a spatula to fold it in.
  6. Allow the buffalo pimento cheese to refrigerate for at least an hour before serving.
  7. Garnish with additional blue cheese and green onions if desired. 

Notes

  1. You can replace the jarred diced pimentos with a diced roasted red bell pepper. Use either a freshly roasted red bell pepper or jarred.
  2. You don’t have to add the blue cheese if you don’t like it. For the best flavor swap the amounts of the medium and extra sharp cheddars, making the extra sharp cheddar the more dominant flavor.
  3. You can use all one type of cheddar if desired or a combination of your favorite cheeses.
  4. Make sure to hand grate your cheeses for the best texture and flavor.
