Ingredients

  • 8 ounces cream cheese, room temperature
  • 1/2 cup mayonnaise
  • 1 cup extra sharp or sharp cheddar shredded
  • 1 cup pepper jack or Monterey Jack shredded
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 4 ounces jars pimentos diced, drained
  • 1 jalapeno finely diced, remove seeds for less heat if desired
  • 2 green onions chopped, plus extra for garnish
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika, plus extra for garnish
  • Kosher salt to taste

Instructions

  1. Preheat your oven or grill to 350 degrees.
  2. Lightly grease a small baking dish or cast iron skillet.
  3. Add the cream cheese, mayo, Dijon, Worcestershire, and seasonings to a bowl and mix until smooth.
  4. Add the pimentos, green onions, and jalapeno and stir to combine.
  5. Fold in the shredded cheeses.
  6. Spread the pimento cheese into the prepared baking dish. 
  7. Allow the dip to bake for 20 minutes or until melted, creamy, and slightly bubbly.
  8. Garnish with additional smoked paprika, green onions, and jalapenos if desired.
  9. Serve with your favorite dippers.

Notes

  1. This recipe can be made on the grill or in the oven. If making this on the grill, prepare your grill for indirect grilling, banking charcoal to either side of the grill and leaving the center as the cooler zone. If using a gas grill only ignite some of the burners, allowing the grill to preheat to 350 degrees. For additional flavor add wood chips to your charcoal.
  2. You can mix up the combination of cheeses for this pimento cheese dip. Make sure that one of them is a good melting cheese like Monterey Jack or Colby Jack.
