Ingredients

  • 813 ounces brie wheel
  • 8 ounces cremini mushrooms, quartered
  • 1 tablespoon unsalted butter
  • 1 large shallot diced
  • 2 garlic cloves minced
  • 1 teaspoon fresh rosemary minced
  • 2 teaspoons fresh thyme minced, plus extra for serving
  • 1 teaspoon fresh sage chopped
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon crushed red pepper flakes, or more to taste
  • 1/3 cup dry white wine
  • 1/4 cup roasted or candied pecans chopped
  • Prosciutto for serving, optional

Instructions

  1. Heat the oven to 350 degrees. Place the brie in an oven safe dish, and lightly score the top, just cutting through the top rind.
  2. Heat a skillet over medium heat with butter. Once melted add the mushrooms in a single layer. Allow them to cook undisturbed for about 5 minutes until they’re beginning to release their water.
  3. Give the mushrooms a stir and allow them to until lightly golden and dry, about another 5 minutes.
  4. Add the shallots, garlic, salt, crushed red pepper, rosemary, and thyme. Stir. Let cook for about 2 minutes until fragrant and the shallots are translucent. 
  5. Add the sage and wine and bring to a simmer. Let cook until the wine evaporates. Remove from the heat.
  6. While the mushrooms are simmering place the brie in the oven and allow to bake for 12-15 minutes until it is mostly melted and soft.
  7. Add the mushroom mixture around and on top of the brie and let the brie bake for another 5 minutes.
  8. To serve, garnish with the chopped pecans, extra thyme, and prosciutto if desired. Serve with crostini, crackers, or your favorite dippers.
