  • Cook the mushrooms. Heat a large skillet over medium and add the butter, letting it melt. Add the mushrooms, spreading them out into a single layer. Let them cook for five minutes, not stirring.   3. Give the mushrooms a stir and allow them to until lightly golden and dry, about another 5 minutes.
  4. Add the shallots, garlic, salt, crushed red pepper, rosemary, and thyme. Stir. Let cook for about 2 minutes until fragrant and the shallots are translucent. 
  5. Add the sage and wine and bring to a simmer. Let cook until the wine evaporates. Remove from the heat.
  6. While the mushrooms are simmering place the brie in the oven and allow to bake for 12-15 minutes until it is mostly melted and soft.
  7. Add the mushroom mixture around and on top of the brie and let the brie bake for another 5 minutes.
  8. To serve, garnish with the chopped pecans, extra thyme, and prosciutto if desired. Serve with crostini, crackers, or your favorite dippers.
